Witnessing this scene, I couldn’t help but think about how similar it is to the process of making "Tencha," the raw material for Matcha. ☺️
To make Tencha, black nets or straw are draped over the tea leaves to block the sunlight. The sight looks just like the deity in this video. 👼
By blocking the light, the bitterness is reduced, and the leaves become packed with Umami. Thanks to that, that beautiful green color and deep flavor are born. 🍀*゜
