→ Covered with shade for 16–20 days (same as Gyokuro)
→ Steamed → Dried (no rolling!)


The no rolling step is the key! It keeps the leaves tender and full of chlorophyll, creating that beautiful emerald color and creamy texture when stone-ground into Matcha.
